
Staple products like Bisquick are great to have on hand for some five-minute biscuits or to add to a quiche. They can be great time savers and many are so inexpensive, that there is probably a box in your cupboard right now. When we lived in the U.S. there was always a box of the generic version in ours.
However, having a solid recipe for making your own biscuit mix can be a life saver during those times when you need half a cup, but all that’s left is a tablespoon. For us, we do not have access to the boxed version,[1. Not for cheap, at least. A box of Bisquick sells for the equivalent of $8 here.] so we’ve turned to this do-it-yourself version that has served us well.
The recipe can be adjusted for your needs and it keeps well in a airtight container.

The Biscuit Mix
Ingredients:
(makes 24 servings)
* 5 cups all purpose flour
* 1/4 cup baking powder
* 1 Tbls. white sugar
* 1 tsp. salt
* 1/2 cup and 2 Tbls. vegetable oil
Method
1. Combine
In a large bowl combine flour, baking powder, sugar, and salt.
2. Add oil
Add oil and thoroughly mix all the ingredients together. It should have a lumpy consistency.
3. Store
Store mixture in an airtight container in a cool, dry place. It will keep for about three months.

To Make Buttermilk Biscuits
Ingredients:
* 2 1/2 cups biscuit mix (see above)
* 2/3 buttermilk (regular milk works fine too)
* A pinch of salt (optional)
Method
1. Preheat oven
Preheat the oven to 450 degrees (230 C)
2. Grease
Lightly grease a baking sheet with butter or oil (alternately you can use wax paper).
3. Combine
Combine the biscuit mix, buttermilk, and salt.
4. Stir
Stir ingredients together to form a soft dough. Turn onto lightly floured surface and knead briefly, about 10 times.
5. Make biscuits
Cut the dough into 12 equal pieces and place on baking sheet.

Roll dough to desire thickness and cut with a biscuit cutter (we use a drinking glass) to make round, flat biscuits.
6. Brush
Brush the tops of the biscuits with milk or an egg wash[2. Lightly beat one egg in a bowl. Add 2 Tbls. water and mix well. Use a pastry brush to apply.] if desired
7. Bake
Bake for 8-10 minutes or until light brown.
Update:
For a quick stove top version, follow steps 1-5 then cook in a frying pan. Heat the pan on medium heat, add 1 Tbls. oil to to the pan, put the biscuit in and cover with a lid (to help steam the biscuit) while lowering the heat. Flip when golden brown and repeat on the other side.
