
When it comes time for the weekend, we often think: cook! This is our chance to experiment with a new dish or take our time to renew a classic. However, when that two-day holiday actually rolls around, the last thing we want to think about is what we’ll be having for meals, especially breakfast. We require the first meal of the day to need little prep and even less actual work. That is why we love overnight french toast and eat it every weekend without fail.
I began with a recipe I found online, but have changed it so much that it is now my own recipe. Recipes like this are wonderful because you can do whatever you want with them. Personally, I don’t even measure, I just throw the ingredients in until it looks good.
Use this as a base for creating your own version. Get creative and mix and match using your favorite ingredients. It is best when made the night before so as to let the liquid fully get into the bread, but it is still delicious made the morning of for a quick breakfast.
The Ingredients:
Makes 1 – 9 in. round pie plate of french toast (4 servings)
- 2 Tbls. butter (or butter spray to grease the pan)
- 6 – 8 slices of bread
- 3 eggs
- 2 medium apples thinly sliced or other fruit (optional)
- 1/2 cup milk
- 3 tsp. cinnamon
- 1/2 tsp. nutmeg
- 3/4 cup sugar
- 2 Tbls. sweetened condensed milk (optional)
Method (The Night Before)
1. Prepare your fruit (optional)
Wash your fruit and cut it into thin slices. I use two medium apples with the peel left on.
2. Grease your pan
Grease the pie plate with 2 Tbls. butter or a butter spray. Make sure the sides of the pan get greased as well.
3. Prepare the sugar mixture
Mix the sugar, cinnamon, and nutmeg together in a small bowl. Keep out about 3 Tbls. of this mixture to add to the eggs in the next step.
4. Prepare the egg mixture
In a separate bowl, whisk eggs, milk, sweetened condensed milk, and the 3 Tbls. reserved sugar mixture together until mixed.
5. Layer
- In a medium bowl dip the apples in the prepared sugar mixture and layer half of them in the bottom of the pan,
- Add a little of the sugar mixture on top, reserving half for the last step.
- Place bread pieces on top of apples, tearing them in half to fit the edges if necessary.
- Pour egg mixture over bread and press down to make sure the bread will soak up the liquid.
- Layer the rest of the apples and sugar on top of the bread.
- Cover with tin foil and place in the refrigerator overnight.
In the morning
6. Preheat
Preheat the oven to 350 degrees F (175 degrees C). Take the french toast out of the fridge to warm up on a counter.
7. Bake
Bake for 30-40 minutes or until golden brown and firm, taking the tinfoil off for the last 5 minutes.
8. Enjoy!
